5 medium wooden skewers
1 lb. prawns (15)
2 Tbsp minced fresh parsley
1 tsp dijon mustard
1/2 tsp salt
1/8 pepper
2 Tbsp evoo
2 Tbsp lemon juice
soak skewers in water for 30-60 minutes prior to grilling
preheat grill to about 400 deg
clean prawns and remove shells. pat dry.
in a bowl combine all ingredients except prawns and mix well. add prawns and coat well. marinate for 10-15 minutes at room temp. skewer 3-4 prawns without leaving space between. place on grill, cover, and cook about 2 minutes per side.
